Hugh starts by making a batter called “Cattermole” for his bread. Hugh explains that you want the bread to rise, and he wants his bread to have a great taste. So what should you use? Hugh suggests an ingredient called Almonds. They come from North America, and are the best source of healthy fats, and a wide range of nutrients.

Almond flour is used to give the bread a crunchy top, and then it is dipped in egg, which coats the almond flour. Almonds are another type of nut that Hugh likes to eat.
